Ingredients
1 Schär Fantasia cake, 450 g (18 oz) bilberries (reserve about 3 tbsp.), 250 g (9 oz) Mascarpone, 200 ml (7 1/2 fl oz) whipping cream, whipped, 2 heaping tbsp. sugar, 1 packet of vanilla sugar, 100 ml (1/2 cup) bilberry juice
...and this is how you do it:

In a mixing bowl, combine the Mascarpone with the bilberry juice, sugar and vanilla sugar. Reserve some whipped cream for garnishing and add the remainder to the Mascarpone mixture.

Divide the mixture into two equal parts, stirring the bilberries into one half.

Cut the cake horizontally through the centre, remove the top half and spread with the bilberry mixture (to which the whole blueberries have been added).

Sandwich the two halves back together and spread the remaining bilberry cream mixture over the top and sides of the cake. Garnish with blueberries and whipped cream.
