Making biscuits in Rome (Italy)

Why is it that you only ever bake biscuits at Christmas? In Rome, we baked Easter biscuits using delicious shortcrust pastry – obviously with absolutely no gluten. Someone even baked a wonderful Milly! As a surprise for all of the children, I took along a genuine gluten-free "colomba pasquale", which is a traditional Italian Easter dove. They were really pleased!
